Save the Basil!

A bit of a sensationalist title, but it can be a real problem. Basil grows beautifully all summer and we get used to cutting fresh leaves for pasta, Caprese salad, infused simple syrups, and yummy additions to lemonade and tea. Then, inevitably, the nights get colder and it stops growing. 🙁 Why can’t we have fresh, delicious basil all winter?

Crock Pot Chicken Taco Chili

Mmm, tacos. Mmm, chili. Tacos and chili? Yes, please! I found this recipe on Pinterest and decided to make it for the viewing party I hosted for the third-party debates. It seemed like it would be a crowd-pleaser and easy to make.

The original recipe said it would serve 6, but I wanted to make a little more, so I added more tomatoes, chicken, onion and sauce…and changed a few other small things to make it my own – as I always do. I can’t help it – I have to tinker! 😉 Continue reading

The Student Loan Scheme

One of the most important issues in our modern society in the US – student loan debt – is near to my heart and a huge reason for the shift in my overall political views and leanings. We are being (have been) robbed of our future and placed into a corporate/government profit scheme to make money off of our debt and force us into a life of indentured servitude by way of redundant, meaningless work in a cubicle, factory, or service job.
