I recently started a little garden on my patio with herbs – cilantro, basil, lavender, mint and lemon thyme, and vegetables – tomatoes, red bell peppers, and jalapenos.
The vegetables aren’t ready yet, but I’ve been dying to start using the herbs so I threw together a salsa with the remains of other veggies in my kitchen. It was so easy and so delicious. I won’t be buying salsa from the store ever again.
Ingredients:
1 medium tomato, cut into about eight wedges
Juice of 1/2 a lime
1/2 jalapeno, seeded and cut into quarters
2 tablespoons scallions or red onions, chopped
1-2 tablespoons fresh cilantro, to taste
1/2 teaspoon minced garlic, to taste
Salt, to taste
Look at that delicious, fresh cilantro!
Place all ingredients in a food processor and pulse until combined. Makes about 2 servings to eat with tortilla chips, or would be enough for taco toppings for four people. It was so, so easy – I encourage everyone to do this. And soon, I’ll have the tomatoes and jalapenos from my own garden to use!
PS – Make sure you seed that jalapeno. I didn’t and mine was HOT – which is saying a lot as I can handle a lot of spice in my food. Although, I think the lime juice will help calm that kick down a bit as it all sits together overnight.

Just tried this and it is uber yummy. It has just the right amount of kick and mmmmm good to it. I should try recipe minus the growing my own garden, the Farmer’s Market has already done it for me 🙂
