Plain carrot juice is yummy, but I felt like something was missing as far as flavor and nutrients.
I began experimenting a bit, then got inspired by a recipe I found online and so this delicious carrot-ginger juice was born. And while those are the main flavors, this juice also has leafy green like kale and spinach, fresh lemons, and apples. It’s one of my favorite juices that I make, and I have it a couple of times a week.
Two of the main benefits of carrots are Vitamin A and beta-carotene, but they are also rich in other vitamins and in folate.
Drinking carrot juice will help to:
- Cleanse and detox the liver
- Help maintain vision
- Help keep cancer away – poly-acetylene anti-oxidant falcarinol in carrots can destroy pre-cancerous cells in tumors
- Keep tooth enamel healthy
- Keep skin looking vibrant – lack of Vitamin A can cause flaking and/or drying of the skin
- Make eyes brighter and eyelashes longer
Drinking ginger will help to:
- Treat coughs and colds
- Fight inflammation
- Reduce menstrual cramps
- Relieve nausea
- Relieve morning sickness naturally
- Improve digestion
- Fight fatigue
- Treat general pains
I take ginger pills (I get them at Whole Foods) to help my motion sickness – and I find they work great. I drink this carrot-ginger juice whenever I have cramps and it helps alleviate the pain.
- 2 large kale leaves or 3-4 handfuls of chopped kale
- 3-4 handfuls of spinach
- 1 thumb-sized piece of ginger
- 4 large carrots, or 6 small ones
- 1 lemon, peeled
- 1 green apple
- Juice ingredients in the order listed.
- Choose all organic ingredients, if possible
- Pour your fresh juice over ice and enjoy!
