We always had chocolate cake growing up and it was always the same recipe – the one my grandma had made for my mom growing up. It was always so moist, not too sweet and topped with light and fluffy chocolate frosting. I decided to make this cake for Sean for Valentine’s Day this year because he LOVES chocolate. It’s an easy recipe that comes together quickly.
This recipe is also a bit different than most from-scratch cake recipes because it used mayonnaise! This ingredient may sound really odd for a cake but it delivers a texture is both fluffy and super-moist at the same time. It is so good!
Grandma's Best Chocolate Cake

Cake
- 2 cups flour
- 1 1/2 cups sugar
- 1/2 cup cocoa
- 3 tsp soda
- 1/2 tsp salt
- 1 cup miracle whip or mayonnaise
- 1 cup boiling water
- 1tsp vanilla
Frosting
- 1 stick of softened, room temperature butter
- 1/2 cup cocoa
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Milk as needed, 1 tablespoon at a time
Cake
- Preheat oven to 350 degrees.
- Cut a circle of parchment paper to cover the bottom of a 9" or 10" round springform pan. Coat pan and parchment paper with non-stick spray.
- Mix dry ingredients together the flour, sugar, cocoa, baking soda and salt in a medium bowl.
- In a large mixing bowl, put mayonnaise and vanilla then add boiling water and stir to combine.
- Add (in 2 sections) the dry mix to the mayonnaise and water mixture.
- Pour into prepared pan and bake 20-25 minutes or until a toothpick inserted into the middle of the cake comes out clean.
- Let cake cook for 10-15 minutes in pan, then remove sides and lift cake (still on bottom of springform pan) onto a serving platter or cake stand and cool completely before frosting.
Frosting
- Beat butter, cocoa, vanilla and powdered sugar, adding milk in 1 tbsp increments until frosting is light and fluffy. Using a spatula, frost the sides and top of the cake.
