Ah, summer. Sweet, sweet summer. What better thing for the dogs days of summer than a cool and refreshing cocktail? This Honeysuckle Fizz cocktail is crisp and bright with the perfect balance of tart and sweet. Enjoy it at the pool, at a cookout or on a lazy Sunday afternoon on the front porch. Cheers to summer, y’all!
This cocktail could be simpler to put together with store-bought lemonade, but I like making my own! Fresh-squeezed lemons, simple syrup and club soda are perfection with slices of cucumber and honeysuckle vodka.
I love bubbles! Bring on the fizz.

Ingredients
- 1/2 cup fresh-squeezed lemon juice
- 1/3 cup simple syrup
- 12 ounces club soda
- 8 ounces honeysuckle vodka
- 3/4 length of cucumber, cut into spears and seeded
- Slices of cucumber and lemon, for garnish (optional)
Instructions
- Slice lemons in half and squeeze out juice until you get 1/2 cup, about 4-5 lemons
- Strain out pulp and seeds
- Add lemon juice to a 32-ounce or larger container or pitcher (I used a mason jar)
- Add 12 ounces of club soda
- Add 1/3 cup simple syrup (mix 1/4 cup granulated sugar and 1/4 cup water and heat until sugar is dissolved)
- Add honeysuckle vodka
- Stir everything together
- Add cucumber spears*
- Pour into short cocktail glasses over ice and with lemon and cucumber slices for garnish
- Enjoy!
- Makes approximately 4 6-ounce servings.
Notes
- *After adding the cucumber, I usually put the lid on the mason jar and put it in the fridge for at least an hour or two before serving. This helps bring out the flavor of the cucumber.
