In the midst of all the crazy wedding planning, Sean and I decided to have a weekend for ourselves. We got a great deal on a little hotel in Gatlinburg, Tennessee because of Sean’s IHG rewards points and so we headed to the Great Smoky Mountains for a rustic weekend.
Tori’s Esquites (Mexican Corn Salad)
When the winter ice storm hit Atlanta a couple of weeks ago, we were on our third consecutive night of Mexican leftovers. We’d had tacos, quesadillas, beans, Spanish rice, carne guisada and were wanting different flavors. We had to use what we had in the house since we couldn’t go anywhere, and I thought a corn salad would be a yummy dish. After looking at some esquites recipes online, I realized that everyone does it a little differently and decided that I would make it my own way, too.
2014 Winter Ice Storm in Atlanta
Last week, we had some pretty epic weather here in Atlanta – a snow/sleet/ice/rain storm that went on for about 2 days. The city and state, wanting to avoid another transportation meltdown like the one that occurred two weeks earlier, took preventative measures. That translated to three work-from-home days for me and Sean.
Contrary to popular belief, work-from-home days are not vacation days – we still work and are busy with meetings, calls, reports, emails, etc. However, it’s nice to not have to commute, be able to eat lunch at home, throw in some laundry and get some snuggles from the pups. CLT to the ATL: Part 2
After the crazy-busy holiday season, I needed some time to rest and relax – which I did in abundance in January. By the beginning of the February, I was ready for more action and I received it in the form of a long weekend visit from Lindsey and Adeline.
We had talked about the visit happening the first weekend of February, but given the horrific weather and traffic events it ended up being great that we decided on the next weekend. Bacon, Zucchini and Goat Cheese Quiche
Savory tarts, otherwise known as quiches, are a favorite breakfast indulgence in my house. We also sometimes indulge in them for lunch or dinner, with a nice green salad. There are endless variations, but this one is my most recent creation – and it may even be my favorite so far. The saltiness of the bacon complements the creaminess of the goat cheese, and the ribbons of zucchini give a light freshness to keep this dish from becoming too rich. Continue reading

An item on every self-help list and one I struggle with on a regular basis says “Don’t compare yourself to other people.” It’s very difficult for most of us to do – we feel we should be at a certain point in life based off of our peers or those we aspire to be like. I thought about where these feelings come from and how they are fostered in us. Consumerism and the media are likely culprits and most frequently blamed. I came across a recipe on Reboot with Joe that featured fennel. Now, I’ve been an advocate of fennel seeds instead of gum for awhile.
